Salted Tahini Caramel Cookie Dough Slice


This delicious recipe was created by talented babe @laurafordnutrition using our delicious mixes. Thinking outside the ball - what a genius.
COOKIE BASE
1 Fit Mixes Cookie Dough - made as per instructions on the pack
handful of macadamias, roughly chopped
TAHINI SALTED CARAMEL
6 medjool dates - roughly chopped
1 tbsp boiling water
1 tbsp rice malt syrup
1 tbsp coconut oil
1/4 tsp sea salt flakes (depending on how salty you want the caramel to be, add more or less)
1/3 cup tahini
1/4 tsp vanilla extract
RAW CHOCOLATE
3 tbsp coconut oil (can also use cacao butter for a more chocolatey flavour)
3 tbsp raw cacao powder
1/2 tsp carob powder (optional)
1 large tbsp honey
pinch of salt
Method:
1. Make the Fit Mixes Cookie Dough as per instructions, add in macadamia nuts and press mixture onto the base of a slice tray lined with greaseproof baking paper. Put in fridge to set.
2. Make caramel by blending all ingredients for caramel in a food processor until smooth and well combined. Scrap down the sides of the bowl occasionally to ensure mixture is smooth. Spread caramel on top of the chilled base and allow to chill.
3. Make chocolate by melting coconut oil in the microwave. Add in honey and whisk to combine well. Add in cacao powder, carob and salt and whisk until well combined. Spread over the top of the chilled caramel and leave to set for at least an hour.
4. Cut into slices and enjoy!
