BASE
FILLING
RAW CHOCOLATE
For the base: Make Chocolate + Chia Fit Mixes as per instructions on the packet, then press dough into the base of a baking paper-lined tray.
For the filling: Mix dry ingredients together in a bowl, then add wet ingredients and mix to make sure everything is coated. Pour over the top of the Fit Mixes base. Place in freezer to set.
For the raw chocolate topping: In a bowl, mix together raw cacao, salt and coconut oil, then add rice malt syrup to taste. Remove slice from freezer then pour chocolate over the top. Return to freezer to set. When ready to eat, cut into slices and enjoy!
This will keep in an airtight container in the fridge for a week, or in the freezer for up to a month.
This AMAZING recipe comes from Mix Mate Holly Shelley at @paradise_pantry:
"These are such a perfect example of something that looks really impressive and hard but is actually super easy! And we have the Fit Mixes to thank for that. I used the Vanilla + Coconut Mix to make a yummy base that goes perfectly with the flavour and textures of the berry chia jam and peppermint choc. You can use any cookie cutter, a Christmas one or none at all. I personally think these would be great for Valentines day or just was a nice surprise to your partner in crime.". Couldn't agree more, thought we wouldn't be sharing them with anyone.

Fit Mixes Cookie Dough
Organic Coconut Oil
Raw cacao powder
Nut Butter
Rice Malt Syrup
1. First, you roll up a batch of Fit Mixes Cookie Dough Balls (so easy and quick). Resist the temptation to devour them now, and stick them in the fridge for 30 minutes.
2. Next, take your favourite nut butter spread (I used both @rustysnuts cacao & coconut and butter and in a seperate batch, @mayversfood coconut super spread (or their almond cacao coconut would work great too) and if it's super thick, dilute with a splash of organic coconut oil. Coat each ball in your nutty spread and place in the freezer for at least two hours to harden. If you are a big time nut butter fan, repeat step 2!
3. Finally, whip up a batch of raw chocolate and let cool slightly. Take your Fit Mixes out of the freezer and gently dip each in your liquid chocolate, placing them on a tray lined with baking paper.
4. Freeze for 20 minutes, then take out and re-dip for a DOUBLE layer of chocolate. Keep those babies frozen and consume whenever the craving for some chocolate cookie dough goodness attacks.
